Whole wheat bread is a traditional preparation that has accompanied various cultures throughout history. Its origin dates back to ancient agricultural civilizations where wheat was one of the first cereals cultivated for food. This type of bread, made with whole or whole wheat, retains all parts of the grain, which gives it a more intense flavor and a denser texture compared to white bread. In Latin America, although its preparation and presentation may vary, it is usually known simply as "whole wheat bread" or "whole grain bread." In countries like Mexico, Argentina, and Colombia, it is highly valued for its nutritional contribution and is consumed both at home and in commercial and artisanal breads.
The popularity of whole wheat bread has increased in recent decades due to growing awareness of healthy eating. Unlike refined bread, this bread provides more fiber, vitamins, and minerals, which aids in digestion and in maintaining healthy cholesterol levels. In different regions, the incorporation of ingredients such as honey, seeds, or vegetable oils may vary, giving a local touch to this classic recipe.
How to prepare Whole Wheat Bread
Ingredients: Water, cracked wheat, honey, salt, oil, yeast, gluten flour, whole wheat flour.
To begin, pour 2 cups of boiling water over the cracked wheat.
Add the honey, reserving 1 teaspoon for later, the salt, and the oil.
Let the mixture cool.
Dissolve the yeast in 2/3 cup of warm water and add the reserved 1 teaspoon of honey.
Combine this mixture with the already cooled cracked wheat mixture.
Add the gluten flour and the whole wheat flour, mixing well until a homogeneous dough is obtained.
Place the dough in a greased bowl and cover it. Let it rest for 1 hour to ferment.
After the first rest, punch the dough down to release the air and let it rest for another 30 minutes.
Punch the dough down again and turn it out onto a floured board.
Knead well to integrate all the ingredients and achieve a smooth texture.
Shape into two loaves and place them in previously greased bread pans.
Bake at 350°F (175°C) until golden brown, approximately 30 to 40 minutes.
Check for doneness after that time.
To check if they are ready, tap the bottom of the bread; if it sounds hollow, the bread is perfectly baked.
If it does not sound hollow, continue baking for an additional 5 to 10 minutes and check again.
