Origin and history of potato and leek soup
Potato and leek soup is a traditional dish with its roots in European peasant cuisine, especially in countries like France, where it is very popular under the name "Potage Parmentier." Over time, the recipe has been adapted and spread to various regions of Latin America, where it acquires different names depending on the country and its local ingredients.
In several Latin American countries, this type of soup is simply known as leek soup or creamy potato soup, being a comforting and common dish on family tables, especially during cold seasons. Its smooth and creamy flavor makes it an ideal option to start a meal or for a light lunch.
This dish stands out for its simplicity and versatility, which allows for variations such as the use of vegetable broths or adding extra ingredients like cheese or bacon. Furthermore, serving it in bread bowls adds a rustic and elegant touch that enhances its enjoyment.
How to prepare Potato and Leek Soup in Bread Bowls
Ingredients:
White Bread, Garlic Cloves, Olive Oil, Potatoes, Leeks, Chicken Broth, Salt, Pepper, Heavy Cream, Nutmeg, Dried Parsley Flakes.
Preparation:
Cut the top off the bread with a thickness of approximately 3/4 of an inch to make "lids."
With a sharp knife, cut around the inside of the bread, leaving a 3/4-inch border for the "bowl."
Carefully hollow out the center of the bread to form the bread bowls.
Rub the inside of the bowls and the bread "lids" with garlic and brush with olive oil.
Bake the lids and bowls on a cookie sheet at 350 degrees until lightly toasted.
In a large pot, combine the potatoes, leeks, chicken broth, salt, and pepper.
Bring to a boil and then reduce the heat to low.
Cover and simmer for 15-20 minutes or until the vegetables are tender.
Strain the soup into another pot to separate the liquid from the cooked vegetables.
Place the cooked potatoes and leeks in a blender or food processor with approximately 1/4 cup of broth and process until a smooth mixture is obtained.
Return the mixture to the pot and add the heavy cream along with the nutmeg.
Gently heat the soup to integrate all the flavors.
Spoon the soup into the prepared warm bread bowls.
Sprinkle with dried parsley to decorate and add a touch of color and freshness.
