How to Make Glasgow Shortbread

In a large bowl, mix the sugar and butter together.

Then add about 3 cups of the combined flour just so you can remove the dough from the bowl and knead in the rest of the flour.

Knead the flour until the dough forms a smooth, round ball.

Almost with the consistency of marzipan or almond paste.

In summer, when doing this, you might need a bit more flour.

For two 8-inch cake pans: cut the dough ball in half.

Flatten the dough in the pan, making a smooth surface.

At this point, you can use a fork and prick the dough all over or use what looks like a butter mold.

Bake for one hour or until golden brown in an oven at 400 degrees.
