Pesto is a traditional Italian sauce originating from the Liguria region in northwestern Italy. Its name comes from the Italian verb "pestare," which means to crush or grind, referring to the original method of preparing the sauce with a mortar and pestle. Although classic pesto is made with basil, pine nuts, garlic, Parmesan cheese, and olive oil, in Latin America there are various versions that adapt the ingredients according to local availability. In countries such as Mexico, Argentina, or Colombia, it is common to find versions that incorporate native ingredients or substitutes to create new culinary proposals. In this sense, the recipe we present today is called "Pacifist Pesto," a plant-based and nutritious version that stands out for its fresh flavor and contemporary story, reflecting a friendlier and more accessible option in Latin American cuisine.
