Old-style crumb cake

Crumb cake is a traditional recipe that has been passed down from generation to generation, especially in rural regions of Mexico, Spain, and some Latin American countries. Originally, it emerged as an ingenious way to use simple and inexpensive ingredients, creating a dessert that combined texture and flavor in every bite. In different Latin American countries, this cake may be known by various names such as "sweet crumbs" or simply "sandy cake," maintaining the essence of a sandy base covered with crispy crumbs that contrast with the softness of the interior.

Its origin is linked to traditional baking, where crumbs were used to avoid waste. This technique merged with the desire to create a sweet treat that could accompany afternoon coffee or become a homemade dessert. Over time, crumb cake has been adapted with local ingredients, but it always retains that characteristic homemade flavor and its grainy texture that charms both adults and children.

How to Prepare Old-Fashioned Style Crumb Cake

To begin, preheat the oven to 190°C and grease a 20 cm baking pan. This will ensure the cake does not stick and bakes evenly.

Next, line the pan with parchment paper and lightly grease it to make it easier to remove the cake once it is ready.

In a large bowl, mix the lard, brown sugar, and 2 cups of flour until you get a fine, sandy mixture. This will be the crunchy and flavorful base of your cake.

Set aside three-quarters of this mixture and leave it to the side, as it will be used later to cover the cake.

Sift the remaining flour and add the baking powder, cinnamon, and salt. These ingredients will provide fluffiness and a special aromatic touch.

Combine this sifted mixture with the sandy mixture you had set aside in the previous step.

Now, add the egg and milk to the mixture, stirring well so that all the ingredients are integrated and a homogeneous dough forms.

Pour the preparation into the previously prepared pan, spreading it evenly to ensure even baking.

Take the reserved crumbs and sprinkle them over the dough in the pan, creating that characteristic crunchy layer of the crumb cake.

Finally, bake the cake in the oven for 35 to 40 minutes, until the surface is golden and a toothpick inserted comes out clean.
