How to Make Mocha Cookies

To begin, preheat the oven to 350 degrees Fahrenheit.

Then, beat the butter until it reaches a creamy texture.

Add both sugars, the white and the brown, and beat well until fully incorporated.

Add the egg and mix well to combine all the ingredients.

Next, add the flour, instant coffee, baking powder, salt, cinnamon, vanilla, and half a cup of nuts.

Mix well until a homogeneous dough is obtained.

Roll the dough in wax paper and refrigerate it completely to make it easier to handle.

When it is cold, take the dough out of the refrigerator.

Using rounded teaspoons of dough, form balls using the palms of your hands and place them 2 inches apart on an ungreased cookie sheet.

Bake for 12 to 15 minutes or until lightly golden.

When you take them out of the oven, and working quickly, place 3 to 4 chocolate chips in the center of each hot cookie.

When the chocolate has softened, spread it over the top and sprinkle with the remaining nuts.
