Herb vinegar is a traditional preparation that has been valued in various cultures for its flavor and aromatic properties. In Latin America, this practice has been adopted and adapted according to local ingredients, creating unique versions in each country. Vinegar, which was originally used to preserve food, was enriched with herbs like lemongrass and mint to enhance its aroma and flavor. In countries like Mexico, Colombia, and Argentina, this vinegar is commonly known as aromatic herb vinegar or garden vinegar, and it is an ideal accompaniment for salads, marinades, and dressings. The incorporation of lemongrass, also called cedrón in some regions, and mint gives it a fresh, citrusy touch that makes it irresistible.
