Five bean salad

Five-bean salad is a traditional dish highly appreciated in various regions of Latin America, especially in Mexico and Central America. Its origin dates back to the mix of indigenous and European cultures, where beans have been a staple food since ancient times. In each country, this salad may present variations in the types of beans used or the additional ingredients, but its essence remains a nutritious and refreshing preparation. In countries like Mexico and Guatemala, this salad is simply known as "mixed bean salad" or "five-bean salad," while in other places it may be found under similar names that refer to the mix of legumes that compose it.

This recipe stands out for the variety of beans it includes, which provides a unique balance of flavors and textures. Furthermore, the marinade with vinegar and spices makes it a perfect dish to accompany meats or to enjoy as a main course in warm climates. The five-bean salad is a clear example of how humble ingredients can be transformed into a versatile and healthy delight, ideal for any time of the year.

How to prepare Five-Bean Salad

To begin, it is necessary to drain all the beans: green beans, wax beans, lima beans, red beans, and chickpeas. Combine them in a large bowl, making sure they are well mixed to integrate the different flavors and textures.

In a small saucepan, heat vegetable oil together with vinegar, sugar, salt, pepper, dry mustard, and celery seeds. Cook over medium heat until the mixture is well integrated and slightly warm, allowing the flavors to blend properly.

Pour the hot mixture over the bean mixture and stir carefully. Cover the bowl and let it rest overnight in the refrigerator so the beans absorb all the seasonings and the vinegar gives them a characteristic and refreshing flavor.

Finally, approximately one hour before serving, add chopped onion and green bell pepper cut into small cubes. Mix gently to incorporate these fresh ingredients that will add crunch and a touch of color to the salad.
