Dill bread, or dill bread, is a traditional preparation with its roots in the cuisines of Northern Europe, specifically in countries like Germany and Scandinavia. This type of bread stands out for its fresh aroma and its light dill flavor, an aromatic herb that has been used for centuries to season food and give it a distinctive touch. In Latin America, although it is not a very common preparation, it can be found in regional variants that include different types of herbs and cheeses, and it is usually known simply as "herb bread" or "dill bread" in countries like Mexico, Argentina, and Chile. Its versatility and exquisite flavor have made it a favorite to accompany soups, cheeses, and cured meats.
The use of cottage cheese in this recipe provides a moist and soft texture to the bread, while balancing the freshness of the dill. Traditionally, this bread was enjoyed for breakfast and snacks, as well as on special occasions where the aroma of dill filled the kitchen, creating a cozy atmosphere. Thanks to its simple and natural ingredients, dill bread continues to be a delicious and healthy option for those who want to experiment with homemade breads with a different touch.
How to prepare Dill bread
Preheat the oven to 350 degrees.
Activate the yeast in the warm water with the sugar.
In a saucepan, heat the cottage cheese until it is warm and add it to the yeast sponge.
Then add the lightly beaten egg, grated onion, melted butter, salt, baking soda, dill seeds, and fresh dill.
Stir until well combined, then add enough flour to make a somewhat soft dough.
Place the dough in a large bowl greased with butter, cover with a towel, and place in a warm spot to rest for about 1 hour or until it doubles in size.
Turn the dough out onto a lightly floured work surface and knead for a couple of minutes.
Then place it in a large bread pan greased with butter.
Cover and let it rest for about 30 minutes.
Then bake in the oven for about 50 minutes or until the bread is lightly golden and sounds hollow when tapped.
Cool wrapped in a towel.
