Stuffed cucumber appetizers

Stuffed cucumber is a fresh and light appetizer with roots in the traditional cuisine of various regions in Latin America and Europe. In countries like Mexico, Colombia, and Argentina, this preparation has been adopted and adapted with local ingredients, maintaining the essence of combining the freshness of cucumber with creamy or savory fillings. In some parts of Latin America, it is simply known as "stuffed cucumbers" or "cucumber appetizers," while in other countries it may be found under similar names that highlight the technique of stuffing vegetables. Its popularity lies in being a simple, visually appealing, and very healthy starter, ideal for gatherings and celebrations.

Besides being easy to prepare, stuffed cucumber adds variety to meals due to its versatility. It can be found in savory versions with cheeses, herbs, and vegetables, or even in more elaborate preparations that include seafood or meats. This particular recipe stands out for the use of combined cheeses with fresh herbs, which enhance the natural flavor of the cucumber and provide a delicious and creamy contrast.
