Cucumber bread rolls are a delicious preparation that combines the freshness of cucumber with the softness of homemade bread. This recipe has its origins in the home cooking of some regions where creativity in baking has allowed for the incorporation of unconventional ingredients, such as cucumber, to give a fresh and distinctive touch to the bread. In several Latin American countries, although they are not always called "cucumber bread rolls," there are similar versions that use fresh vegetables and herbs to enrich the dough, adapting to local tastes and the availability of ingredients. For example, in Mexico and Colombia, there are breads with various herbs that can resemble them in flavor and texture. This type of bread is ideal for those looking for something different and nutritious, incorporating cucumber not only for its flavor but also for its contribution of hydration and freshness.
How to Make Cucumber Bread Rolls
Place the cucumber in a blender or food processor.
Cover and process until a smooth mixture is obtained.
Place 3/4 cup of the puree in a saucepan, add sour cream, water, sugar, and salt to the saucepan.

Punch the dough down to release the air.
Let rest for 10 minutes.
Shape into 12 balls.
Place in a 13 x 9 x 2 inch baking pan that has been sprayed with non-stick spray.
