Sour cream stew

Stew is a traditional dish that has been a fundamental part of the cuisine in many cultures around the world. In Latin America, this type of preparation is commonly known as "estofado" or "guiso," and although each country has its own version, the essence is always the same: to slowly cook meat together with vegetables and spices to obtain a dish full of flavor and tender texture.

In Mexico, for example, it is often called "carne en su jugo" or simply "estofado," while in countries like Argentina and Chile, the term "guiso" is more frequent. In Colombia and Venezuela, it is found under similar names, and each region contributes special ingredients according to its local traditions. The combination with sour cream is an influence that adds smoothness and a tangy touch, making the stew creamier and more appetizing, thus combining the traditional with a modern nuance that pleases everyone.

How to prepare Juicy Sour Cream Stew

To begin, coat the beef roast in flour and brown all sides in cooking oil inside a Dutch oven. This will allow the meat to sear and keep its juices inside.

Place the rack under the meat and sprinkle with salt and pepper to taste, to enhance the flavor during cooking.

Add water, garlic, onion, tomato sauce, bay leaf, and thyme to the Dutch oven. Cover and simmer for 3 hours and 30 minutes or until the meat is tender and easy to cut.

In a small skillet, cook the fresh sliced mushrooms in butter until they are tender and golden. This will add a delicious additional flavor to the dish.

When the meat is ready, remove it to a cutting board and remove the bay leaf from the cooking liquid.

If you wish to thicken the sauce, add two teaspoons of unbleached flour combined with 1/4 cup of water to the cooking liquid and cook until the desired consistency is achieved.

Next, add the browned mushrooms and the sour cream to the sauce, cook over medium heat without allowing it to boil to maintain the proper creamy texture.

Slice the beef into portions and serve alongside hot buttered noodles, sprinkled with paprika for a touch of color and flavor.

Finally, offer the cream sauce separately so that each diner can enjoy it to their liking.
