Creamy salted cod soup

Cod has been a fundamental ingredient in the cuisine of many cultures around the world. In Latin America, cod soup is a traditional recipe that reflects the European influence, especially Spanish and Portuguese, in the region. This dish varies in name and preparation depending on the country: in Mexico it is simply known as "cod soup", while in countries like Colombia and Venezuela, it may be associated with festive recipes during the Christmas season. In other places it is called "creamed cod" when the preparation is thicker and creamier. The history of this soup comes from the need to preserve cod through salting, which allowed for its storage and transport over long distances, transforming over time into a delicious homemade recipe to make use of this fish.

The popularity of cod soup remains thanks to its comforting and nutritious flavor, ideal for cold days or as a main dish for special celebrations. The main ingredients, such as salted cod, vegetables, and bacon, combine to form a creamy and comforting preparation that invites sharing with family.

How to prepare Creamy salted cod soup

To begin, desalt the cod by soaking it overnight in cold water until it is completely covered. Then, drain and place the cod in a stewing pot, covering it with fresh water.

Bring to a simmer over low heat to cook the fish gently. It is important to check if the cod is still too salty; in that case, drain, add fresh cold water again, simmer, and drain once more to ensure proper desalting.

Fry the salted bacon in the same pot until crispy. Remove the pieces of fried bacon and set them aside for garnishing at the end.

Cook the onion in the fat released by the bacon until it is tender and translucent.

Add the raw potatoes, carrots, water, salt, and pepper to taste. Cook covered for approximately ten minutes or until the vegetables are tender and cooked.

Add the canned corn, warmed milk, and finally the previously desalted cod.

Bring the soup to a gentle simmer, making sure it does not come to a rolling boil.

Garnish with the reserved crispy bacon pieces and serve the soup very hot, accompanied by freshly baked homemade bread or buttered buns to complement this delicious preparation.
