How to prepare Creamy salted cod soup
To begin, desalt the cod by soaking it overnight in cold water until it is completely covered. Then, drain and place the cod in a stewing pot, covering it with fresh water.
Bring to a simmer over low heat to cook the fish gently. It is important to check if the cod is still too salty; in that case, drain, add fresh cold water again, simmer, and drain once more to ensure proper desalting.
Fry the salted bacon in the same pot until crispy. Remove the pieces of fried bacon and set them aside for garnishing at the end.
Cook the onion in the fat released by the bacon until it is tender and translucent.
Add the raw potatoes, carrots, water, salt, and pepper to taste. Cook covered for approximately ten minutes or until the vegetables are tender and cooked.
Add the canned corn, warmed milk, and finally the previously desalted cod.
Bring the soup to a gentle simmer, making sure it does not come to a rolling boil.
Garnish with the reserved crispy bacon pieces and serve the soup very hot, accompanied by freshly baked homemade bread or buttered buns to complement this delicious preparation.
