How to prepare Classic Chicken and Coconut Soup

Ingredients: Chicken Broth, Unsweetened Coconut Milk, Fresh Lemongrass, Chicken Breast, Lime Juice, Jalapeño Chili, Fresh Cilantro.

Bring the first 3 ingredients to a boil in a medium heavy saucepan.

Reduce the heat.

Add the chicken and simmer until almost cooked, turning occasionally, about 12 minutes.

Transfer the chicken to a plate.

Let it cool.

Remove the skin and bones from the chicken.

Cut the meat into 1/2-inch pieces.

Strain the soup through a sieve into a small saucepan.

Add 1 tablespoon of lime juice and jalapeño to the soup and simmer until reduced to 2 cups, about 20 minutes.

Add the chicken and simmer just to heat through.

Taste, adding more lime juice if desired.

Serve the soup in bowls.

Sprinkle with fresh cilantro.
