Ingredients: Sugar, cornstarch, sweet cherries, almond-flavored liqueur, pre-baked 9-inch pie crusts, flour, butter, and shredded coconut.
Steps:
Combine sugar and cornstarch in a saucepan.
The amount of sugar depends on the sweetness of the cherries and how sweet you like the pie; I use 1/2 cup.
Add the cherries and the liqueur.
Cook and stir over low heat until the mixture thickens.
Spoon the mixture onto the pre-baked pie crusts.
Prepare the topping: combine flour and sugar and mix with butter using a pastry cutter, until a coarse crumb texture is achieved.
Incorporate the coconut.
