How to Make Carrot and Maple Cheesecake

Ingredients:

Graham Crackers, Butter, Carrots, Light Cream Cheese, Granulated Sugar, Maple Syrup, Eggs, Water.

Steps:

Crust: combine ingredients.

Mix well.

Press into a 9-inch springform pan.

Bake in a preheated oven at 350 °F for 10 minutes.

Filling: simmer the grated carrots in enough water to cover them for 5 minutes.

Drain and remove excess liquid.

In a food processor, combine carrots, cream cheese, sugar, and maple syrup; process until completely smooth and uniform in color.

Add eggs, one at a time, and mix until just incorporated.

Pour over the crumb crust and bake at 300 °F for 45 minutes or until the center is almost set.

Let cool to room temperature.
