In other countries like Colombia and Chile, they are simply called caramel cookies or toffee cookies, maintaining the essence of their sweet flavor and crunchy texture with caramelized bits.

These cookies combine the smoothness of butter with the crunchy texture of oats and the intense sweetness of English toffee, creating a perfect balance of flavors and textures. They are ideal to accompany a cup of coffee or tea and make any moment a special pleasure.

How to Make Caramel Cookies

Preheat the oven to 190°C (375°F).

Lightly grease 2 baking sheets. Combine the sugars, vanilla, egg, butter, and shortening in a large mixing bowl.

Beat until fluffy.

In a separate bowl, combine the flour, oats, salt, and baking soda.

Add to the sugar mixture and mix thoroughly.

Add the toffee bits and chocolate chips to the dough and mix well.

Place teaspoonfuls of dough onto the baking sheets, leaving a space of about 2.5 cm (1 inch) between them.

Bake until golden, approximately 8 minutes.

Let cool on a wire rack.

Store in an airtight container in a cool place.

Yields approximately 40 cookies.
