Bubbling berry tart with lattice

Origin and history of Bubbling Berry Lattice Tart

Bubbling Berry Lattice Tart is a classic of pastry that has become especially popular in the United States and Canada, where berries like blueberries are grown in abundance. This dessert represents the perfect combination of the natural sweetness of the fruits and a crunchy baked base, adorned with a lattice pastry topping that not only adds texture but also an attractive presentation.

In Latin America, although there is no universal name for this type of tart, it can be found under similar names such as "red fruit cake" or "forest berry pie," depending on the country and the type of berries used. For example, in Mexico it is common to prepare tarts with strawberries or blackberries, while in Argentina and Chile the use of raspberries and blueberries predominates in desserts of similar characteristics.

This type of recipe has its roots in the European tradition of fruit tarts, adapted in North America to local ingredients. The lattice design of the topping is typical of several regions and is intended not only to decorate but also to allow steam to escape during baking, creating that "bubbling" effect that gives the tart its name.
