Kesari rice

Kesari Rice is a traditional dessert originating from South India, known for its soft texture and sweet, aromatic flavor. Although its name literally means "rice with saffron," it is actually made primarily with semolina (rava) and not rice, which can cause some confusion. This sweet treat is very popular in various regions of India, especially during festivals and religious celebrations. In different Latin American countries, similar recipes may be known as "rice atole" or "sweet rice pudding," although with variations in ingredients and techniques. The influence of spices like saffron and the use of nuts give Kesari its unique and special character.

How to prepare Kesari Rice

For this recipe you will need: semolina, banana, sugar, milk, clarified butter (ghee), cashews, pistachios, raisins, and saffron.

Put rava, bananas, sugar, and milk in a saucepan.

Wait a while until it heats up sufficiently.

Continue stirring until the rava is cooked.

Fry cashews, raisins, and pistachos in ghee and add them to the mixture.

Add saffron, previously soaked in a tablespoon of milk, to give it its characteristic color and aroma.
