Apricot Cream Tart: History and Origin
Apricot cream tart is a traditional dessert that combines the delicacy of fresh apricots with a rich pastry cream on a crunchy base. Its origin is linked to European tradition, especially in French and German gastronomy, where seasonal fruits are incorporated into pastries to highlight their natural flavor.
In Latin America, although apricot is not a very common fruit in all regions, this tart is known and appreciated in countries such as Argentina, Chile, and Mexico. In some places it is called "apricot peach tart" or simply "apricot tart," depending on the local fruit used. In Chile, it is common to find similar versions adapted to summer fruit.
This dessert has transcended borders due to its fresh flavor and balanced texture, being a popular option for both family celebrations and gourmet cafes.

Steps:
For the crust, mix flour, sugar, and salt in the processor for 5 seconds.
Add butter, incorporating it with pulsing motions until the mixture resembles coarse meal.
Incorporate vanilla and enough water to form moist clumps.
Briefly knead the dough on the work surface to combine and flatten into a disk.
Cover with plastic wrap and refrigerate until firm, at least two hours or half an hour in the freezer.

Roll out the dough on a lightly floured surface to form a 13-inch circle.
Transfer to an 11-inch diameter tart pan with a removable bottom.
Gently press the dough into the pan, trimming the excess.
Freeze for 30 minutes.
Place the pan on a baking sheet and bake until light golden brown, approximately 25 minutes.
If the crust bubbles, prick it with a skewer.
Cool the crust.
For the filling: Combine cream, 1/4 cup of sugar, flour, brandy, egg yolk, and vanilla in the processor and mix until smooth.
Place the apricot pieces with the cut side down on the cooled crust.
Pour the custard over the fruit.
Sprinkle with the remaining 3 tablespoons of sugar.
Bake the tart on the baking sheet until the apricots are tender and the filling is puffed and set, 30 to 60 minutes.
Test with a skewer.
Cool to room temperature.
Push up from the bottom of the pan to release the tart and serve.
