History and origin of pizza and sourdough
Pizza is one of the most popular dishes worldwide and has its roots in Italian cuisine, specifically in Naples. Originally, it was a simple preparation with flatbread, tomato, and cheese, which over time evolved to include a wide variety of ingredients. Sourdough, on the other hand, is a traditional method of natural fermentation that has been used since ancient times to make bread. Unlike industrial yeasts, sourdough provides a deeper flavor, a lighter texture, and is easier to digest.
In different Latin American countries, pizza goes by various names, although in most places it is simply known as "pizza." However, in places like Argentina and Uruguay, where the pizza tradition is very strong, unique variants and styles stand out, such as the thin and crispy crust or the pan pizza with abundant sauce and cheese. The use of sourdough in the base provides an artisanal and healthy touch that has become popular in the region thanks to the growing interest in ancestral baking techniques.
