Curry is a culinary preparation with its roots in South Asian cuisine, especially in India, where various spice blends create its characteristic flavors. Over the centuries, this tradition has been adapted in many parts of the world, including Latin American countries, where it is fused with local ingredients to create unique dishes. In countries like Mexico, Venezuela, and Colombia, curry can be found under similar names but with regional variations in its ingredients and preparation methods. Furthermore, satay, which is a traditional dish from Indonesia and Malaysia, consists of marinated meat skewered on sticks and grilled, often accompanied by a peanut sauce. The combination of a beef curry with chicken satay represents a perfect fusion of these two Asian culinary traditions, adapted to Latin American tastes.
How to Prepare Beef Curry and Chicken Satay
To begin, cut the meat into thin strips, no more than 1/4" thick and approximately 1/2" wide for both the beef and the chicken.
Combine the curry powder, chilies, garlic cloves, onions, salt, lemon juice, and honey in a large bowl.
Add the meat strips and mix well to marinate for about fifteen minutes.
Thread the meat strips onto bamboo skewers, placing 3 to 4 pieces per skewer.
Place the finished skewers in a glass baking dish.
Cover with the remaining marinade and refrigerate while preparing the sauce.
Brown the meat skewers under the broiler or on the grill until golden brown and properly cooked.
Serve with peanut butter dipping sauce.
For the sauce, blend all the ingredients well: peanut butter, coconut milk, soy sauce, Worcestershire sauce, chili sauce, and salt, until a smooth mixture is obtained.
Keep the sauce refrigerated until ready to use, but heat it before serving to enhance its flavor.
