How to Make Blueberry Picnic Bars
To begin, preheat the oven to 350°F (175°C). Line an 8-inch square pan with aluminum foil, letting the edges overhang on two sides to make it easier to remove later.
In a large bowl, mix the oats, flour, light brown sugar, baking soda, and salt. Add the melted unsalted butter and stir with a fork until the mixture is evenly moistened.
Separate ½ cup of this crumb mixture and set it aside for the topping. With the remaining mixture, press it evenly and firmly onto the bottom of the prepared pan, without greasing it.
Bake the base for 12 minutes so it sets well.
For the filling, in a small saucepan mix the blueberries, sugar, cornstarch, and fresh lemon juice. Cook over medium heat, stirring constantly until it comes to a simmer.
Let it simmer, stirring occasionally, until the juices clear, for about 2 minutes.
