Vanilla essence is an aromatic extract obtained from the pods of the Vanilla planifolia, an orchid native to Mexico. This ingredient is essential in baking and gastronomy to provide a characteristic sweet and fragrant flavor to a wide variety of desserts, such as cakes, ice creams, custards, and cookies.
The essence is made by macerating the vanilla pods in an alcoholic base, which allows for the extraction of its aromatic compounds, mainly vanillin, responsible for its very particular flavor. In addition to its use in cooking, vanilla essence has a slight antioxidant effect and is used to enhance other flavors in preparations.
In Latin America, vanilla essence can also be found under the names vanilla extract or simply liquid vanilla. It is important not to confuse it with vanilla sugar or vanilla paste, which have different concentrations and textures.
