Baby artichoke is the youngest and most tender stage of the artichoke, a vegetable highly valued in gastronomy for its delicate flavor and pleasant texture. It is characterized by small, compact buds with tender leaves that can be easily consumed without the need to remove the tougher parts. The baby artichoke is ideal for preparations such as salads, sautés, creams, and stews, providing a fresh and slightly sweet touch.
This ingredient comes from the artichoke (Cynara scolymus), a plant native to the Mediterranean region, where it has been cultivated since ancient times. Currently, its production extends to various parts of the world with temperate climates, including countries in Latin America.
Regarding its properties, the baby artichoke is low in calories and rich in fiber, B vitamins, vitamin C, and minerals such as iron, magnesium, and potassium. Furthermore, it contains natural antioxidants that aid digestion and liver health.
Depending on the Spanish-speaking country, the baby artichoke may have different synonyms. In some regions of Latin America, it is known as alcaucil tierno (Argentina), alcaucil bebé, or simply young artichokes. In Mexico and Central America, although less common, it may also be referred to as alcachofa fresca or alcachofa joven.
