Salt and freshly ground black pepper are two essential ingredients in cooking to enhance the flavor of practically any dish.
Salt: It is a mineral composed mainly of sodium chloride, fundamental for enhancing and balancing flavors in savory recipes and, to a lesser extent, in sweet ones. Its origin dates back to antiquity, as it is obtained from the evaporation of seawater or from salt mines. In cooking, salt helps intensify and highlight other flavors and is also important for food preservation.
Freshly ground black pepper: It comes from the dried fruits of the Piper nigrum plant, native to India, especially the Kerala region. Whole black peppercorns are ground just before use to release their essential oils and characteristic aromas, providing a spicy, warm, and slightly smoky flavor to preparations. The freshness of the grind makes its flavor much more intense and aromatic than pre-ground pepper.
Properties: Salt, in adequate amounts, is vital for electrolyte balance and functions as a flavor enhancer. Black pepper contains piperine, a compound that, in addition to providing flavor, has antioxidant and digestive properties.
Substitutes and synonyms in Latin America: Salt can also be found as "fine salt," "coarse salt," or "table salt" depending on its size and use. Black pepper may simply be called "pepper," and when referring to the freshly ground spice, "freshly ground pepper" or "peppercorns for grinding" are used. In some regions, such as Mexico or Central America, black pepper may also be called "whole pepper" for home grinding.
