Enoki mushrooms, also known as enokitake, are a type of edible mushroom characterized by their long, thin appearance, with small white or cream-colored caps. They are very popular in Asian cuisine, especially in Japanese, Chinese, and Korean cooking, where they are used in soups, salads, stir-fries, and stews due to their crunchy texture and mild, delicate flavor.

Native primarily to Japan and Korea, enoki mushrooms grow naturally on dead tree trunks, although they are now commercially cultivated in controlled conditions to achieve their characteristic long and clustered stem.
