Dark amber maple syrup is a natural sweetener obtained from the extract of the sap of maple trees, particularly the sugar maple, typically harvested in regions of Canada and the northeastern United States. During the production process, the sap is boiled to evaporate the water, concentrating the natural sugars and developing a deep, robust, and slightly caramelized flavor that distinguishes this dark amber variety.
This syrup is widely used in cooking to flavor and sweeten products such as pancakes, waffles, yogurts, desserts, and dressings. Thanks to its intense flavor and dark color, it provides a stronger and more concentrated profile compared to light maple syrup.

In different Hispanic American countries, dark amber maple syrup may be known as miel de arce or simply jarabe de arce, although the most common term is maple syrup, since the word "miel" (honey) is usually reserved for bee-derived products.
