Citrus juice is the liquid extracted from fruits belonging to the Citrus genus, such as lemon, orange, lime, grapefruit, and mandarins. This juice is characterized by its acidic and refreshing flavor, due to its high concentration of citric acid and vitamin C.
The use of citrus juice in cooking is very broad: it is used to marinate meats, prepare dressings and sauces, add an acidic touch to desserts, cocktails and beverages, as well as to preserve food.
The origin of citrus fruits dates back to regions of Southeast Asia, from where they spread to the Mediterranean, America, and other parts of the world through historic trade routes.
Properties: in addition to providing a distinctive flavor, citrus juice is rich in antioxidants and vitamin C, which help strengthen the immune system. It also contains compounds that aid digestion and can act as natural preservatives.
In different Spanish-speaking countries, citrus juice may also be known as lemon juice (when referring to lemon), lime juice (in regions where lime is more common), or simply orange juice if extracted from this fruit. In some places, the term zumo cítrico is used as a synonym.
