San Fernando beans

San Fernando Beans are a traditional preparation with roots in the gastronomy of South Texas, in the United States, although their Tex-Mex and Mexican influence is unmistakable. Their origin dates back to farming communities that utilized local ingredients and slow-cooking techniques to create dishes full of flavor and character. In different Latin American countries, beans are prepared with similar variations: in Mexico they are known as "frijoles charros" (cowboy beans), while in some regions of Central America they are called "frijoles rancheros" (ranch-style beans). These names usually refer to the mixture of meat and spices that enhance the flavor of the beans, making this dish a popular choice for family gatherings and celebrations.

This recipe stands out for combining fresh ingredients and spices, creating a perfect harmony between sweet, salty, and spicy. Furthermore, it is an excellent source of protein and fiber, making it a nutritious and comforting food.

How to Prepare San Fernando Beans

To begin, wash the dry red beans and soak them overnight in cold water to soften them.

In the same water used to soak the beans, bring to a vigorous boil, then cover the pot and simmer for approximately 1 to 2 hours, until the beans are tender.

Once cooked, drain the beans and keep them warm while you prepare the rest.

Combine in a pot the bulk pork sausage, brown sugar, chopped apples, onions, garlic, tomato juice, Worcestershire powder, salt, black pepper, and chili powder. Mix all the ingredients well to integrate the flavors.

Bring this mixture to a vigorous boil and subsequently add the drained beans.

Simmer with the lid on tightly for 2 hours, allowing the flavors to blend and the stew to acquire a thick and savory texture.
